Spring Sausage Making and Smoking Class

Ever wanted to see how the sausage gets made? On the 19th and 20th of April join Mad River Food Hub for our 2-day Spring Sausage Making and Smoking Class!

The class, in association with Vermont Technical College, will place an emphasis on home production of delicious local processed meats. Participants will get to experience the whole process first hand; grinding, stuffing, brining, and dry-curing. The class will demo fabricating locally sourced pork and beef, and gain hands-on experience making Sausages, Hot Dogs, Deli Ham, Pastrami, and Bacon. Participants will get to take home all of the products made during the class. In addition to the hands on demo, the instructor Bill Cavanaugh will also cover USDA food safety standards.
