Come Taste Japanese Knotweed

First, I want to thank Janet for having us at the Local Arts & Eats Event. And I want to thank the participants for stopping by our table and tasting some Japanese knotweed. I agree that it is 'not bad' and 'unexpectedly delicious'. I encourage everyone to harvest and eat Japenese Knotweed because it is tasty, easy to find, has a lot of health benefits, and the more we cut it the more we weaken the plant.

This project is a partnership between two AmeriCorps members. I am with the Ag Institute Vermont Tech and Nate Enright is with RACDC. Nate focuses on removal of invasive species and restoration of disturbed sites in the floodplain forest (I encourage you to volunteer working outside with him!) I work as the community food system coordinator. Introducing the edibility of the knotweed is how we can help Nate control the plant.

I invite you to come taste the knotweed at Vermont Tech Farmers' Market tomorrow (May 25) 3pm-6pm on the front lawn of the old dorm. If you harvest yourself some, be sure not to compost raw fragments or leave them on the ground because they will grow to a new plant!
