Vegetable Fermentation - Not just for cabbage
Learn how to make nutrient dense fermented foods. Simple ingredients and rules to follow to make your ferments come out right every time! Fermenting actually increases the nutrient value of your vegetables. Participants learn hands-on how to ferment vegetables with a brine and without. Each person takes home fermenting vegetables. Taste some ferments that Hannah has made on the farm.

Dehydrating Vegetables, Fruits and Herbs
Learn techniques to dry your vegetables in the sun, in your oven and in an electric dehydrator. Learn some super easy tricks to make your vegetables and herbs dry down and keep for many, many months. Participants will also learn how to use the dried goods throughout the year. From eating as is, to reconstituting to crumbling. You will learn what method to use for a variety of different recipes. Participants will take home some already dehydrated products to experiment with in future recipes. You will also take home recipes that work well with dehydrated foods.

Saturday, October 5th, 10-1
Canning 101
Come learn the basics of hot water bath canning with high acid foods. We'll be making tomato sauce, salsa and apple sauce. Test the results of the food mill versus hand peeling and seeding. Find out how to add other vegetables to your tomato sauce while maintaining the correct acidity for food safety. Do you have to sterilize your jars? How tight should the lids be? How much liquid do I put in each jar? How long will the canned foods keep? Learn the answers to all of these questions and more. You get to take home your choice of a jar of canned food and a guide for canning on your own at home.

Freezing the Harvest
Eat local foods year-round out of your own freezer. Most vegetables and fruits are so easy to freeze, you won't believe it! We'll cover greens, tomatoes, apples, herbs, and a few others from the garden. Make your winter meals easy with self-frozen foods. Take away a chart of blanching times and food that's ready for your freezer!

Pre-registration is required. Workshops are $20 each or take all 4 for $60 (a 25% savings!). All workshops are from 10:00AM to 1:00PM. You're invited to bring a bag lunch and have a picnic on the farm after class. We'll take a 20 minute break in the morning. We will be outside at least a portion of each workshop, so wear comfortable weather appropriate clothing and footwear.
