S.E. ASIAN COOKING CLASS: STILL TIME TO SIGN UP
What: A HANDS-ON cooking lesson for five or six students, featuring Southeast Asian dishes. The 3-hour class will end with dinner and discussion.
Where: The Maple Corner Community Center.
When: 6 to 9 p.m. this Thursday.
Who: Instructor is Dirk Van Susteren, a Chinese-cooking enthusiast, who has catered and supervised Asian dinners at the MCCC, and who two years ago took cooking courses at the Institute for Higher Cuisine in Chengdu, Sichuan.
What you will learn: How to find and store ingredients; how to use basic Asian cooking utensils; how to employ basic cooking techniques, and how to find workable recipes. (Class participants will leave the course with printouts of five easy-to-follow recipes that will work well for their own small dinner gatherings.)
How much: $55 per person (includes all ingredients).
What to bring: Cutting board, apron, notebook and pen, and cleaver or chef’s knife. Also, liquid refreshment, if desired. Tea will be available.
This Thursday’s recipes:
Thai fried rice with shrimp, cashews, mint or cilantro.
Vietnamese catfish braised in a sweet and peppery sauce.
Cambodian-style stir-fried ginger chicken flavored with mushroom soy.
Vietnamese spinach with garlic, black pepper, and light fish sauce.
Dry-fried cauliflower florets with garlic, scallions, fish sauce and cilantro or mint
