June 12 Monday Munch at the Charlotte Senior Center brings you a trio of summer salads AND rhubarb brownies.
Menu: bulgur salad with grapes, feta and mint; corn salad; green salad; rhubarb brownies
Bulgur dates back to the Euphrates valley as far back as 5,000 B.C. Around 2,800 B.C. Chinese emperor Shen Nung acknowledged bulgur as one of five sacred crops. Still very popular around the world, the English like rhubarb custard, Norwegians rhubarb soup. In Afghanistan, they add it to spinach, and in Poland it's cooked with potatoes. At the Charlotte Senior Center, cooks advise "East your vegetables!" Botanically, that rhubarb in your rhubarb brownie is a vegetable.
It's hard to find a happy tune about bulgar or rhubarb, but Cole Porter was born June 9, 1891, so here he is performing his song "Anything Goes"
