Are you interested in supporting the Underhill Jericho Land Trust (JULT) and trying traditional Ethiopian and Eritrean cuisine in a lovely evening setting? The Chef and Founder of A Taste of Abyssinia will provide a dinner on June 22, 2023 at 8 Edgmont Rd., Underhill Center. Seatings are 5-6:30 p.m. and 7-8:30 p.m. The cost is $100/couple + a donation to JULT. Payment will be made by check only to Mansfield House for the dinner. A tax-deductible donation to support JULT's land conservation work is welcome separately. Table groups can be reserved for 4-6 people per table.
One table per seating will also be available for a 2-person reservation. This authentic Ethiopian & Eritrean cuisine is served on platters for eating with traditional Injera, a fermented flatbread, used as a utensil. The menu is as follows:
1. Curried chicken - tender chicken simmered with onion, garlic, ginger, tomato and Eritrean seasoned butter
2. Spiced beef - beef braised in spicy berbere*, onion tomato, garlic, ginger and seasoned butter
3. Collard green - green slow-cooked with red onion, fresh tomato, celery, jalapeno, garlic and ginger
4. Lentil - split orange lentils cooked with onion, tomato, garlic, ginger and curry seasonings- mild spice
5. Ginger cabbage - cabbage sauteed in red onion, garlic and ginger
* Berbere – a powder made from dried red hot pepper seasoned with coriander, ginger, garlic, cumin and shallots
Fruit salad for dessert. Coffee BYOB
