Second Wind
with Guest Chef: Dan Callahan
Second Wind is a Randolph, VT acoustic band performing an eclectic mix of contemporary and classic folk and blues tunes with a growing repertoire of original songs. Members are Jim Sardonis, Jim Green, Eric Sakai and Ralph Molinario.
Dan Callahan was born in Boston, MA. He grew up in Needham, MA and enrolled at the Culinary Institute of America when he was 21. He finished with an Associate in Occupational Studies, Culinary Arts, worked at several restaurants in New York including La Caravelle Restaurant, The Plaza Hotel and The Union League Club which was a private club founded to unite the country in the Civil War.
Dan moved to San Francisco, CA in 1981. He started as a sous chef in Union Square then became the Executive Chef at the Carnelian Room and several private clubs in San Francisco. He opened two Cat Cora's Kitchen locations: San Francisco and Salt Lake City, working closely with the Iron Chef. At the SF location, he met, worked and became long time friends with Patty.
Dan's background is primarily French cuisine and specializes in sauces. He is now a retired chef and spends his time cooking, spoiling people - mostly kitchen staff and giving labor in exchange for nothing. He has survived 9 surgeries, cancer twice and is a chef in Burning Man events.
