Jamaican Cuisine With Jackie Thomas

Winooski's own Jackie Thomas will be introducing participants to the flavors and cuisine of Jamaica. Join Jackie for a virtual cooking demo as she guides participants through the steps of preparing Jamaica's national dish - ackee and salted codfish served with fried Johnny Cakes. Learn all about ackee (Akye-fufo), a fruit native to West Africa, and its traditional pairing with codfish that results in a uniquely original meal.
This program is free and only available to Winooski residents. A special Zoom meeting invite will be sent to you before each session.
About the instructor: Jacqueline Thomas was born in Jamaica and has over 10 years of management experience working in the hotel and hospitality industry. Previously, she earned a diploma in Tourism while living in Jamaica and holds a diploma in Gourmet Cooking and Catering from Ashworth College in Atlanta, Georgia. For the past six years, Jacqueline has been living and working in Vermont and has held positions at a number of resorts and clubs throughout the state. From restaurant supervisor to hostess to dining room captain and in-house catering supervisor, Jacqueline has ample experience with food and beverage, event décor, and more. In her time off, Jacqueline enjoys decorating events and showing off her delicious meals to family and friends. Jacqueline lives with her loving husband, a native Vermonter, in Winooski, and is mother to a son.
"Cook the Book" is the Library's free virtual cooking program that aims to engage our residents in a fun and educational (and delicious) experience that can be enjoyed safely at home. Participants can learn to prepare a healthy and delicious recipe in real-time with a featured local chef while introducing new recipes and techniques for any skill level. Please note: a limited number of ingredient kits will be provided to participants (first-served) and made possible by the generous support of City Market Co-op and our guest chefs.
