GERMAN FARMER'S BREAD (SCHWÄBISCHES BAUERNBROT)

We at Rise Up Bakery are thrilled to offer a workshop on making and baking a wonderful bread popular bread that is widely popular throughout the towns and villages of southern Germany.

Spend a productive afternoon and learn to make this is a hearty and nutritious rustic loaf, while learning to master the principles and techniques that can be applied to a wide range of other breads that might interest you. At Rise Up Bakery, we are very passionate about encouraging and helping the community master these millennium old traditions.

At this workshop you will learn about:

- the attributes of the different flours,
- yeasted vs sourdough bread
- baker's math and how to calculate dough temperature
- pre-fermented doughs
- fermentation methods
- kneading technique (Very important!)
- pre-shaping the loaf, bench rest, and the final form
- scoring (slashing) loaves: how and why
- the equipment/accessories needed for home bread baking, and
- bread storage
