Pairing # 1 - Le Crescent White with 2 Years Cheddar + roasted mixed nuts
Grafton Village signature cheddar - its robust flavors and aroma feature savory and nutty notes and a long finish.
La Crescent is a zippy, off-dry white to bring out the nutty notes of the cheddar
Pairing #2 - Starlight Rosé with Grand Reserve 32-48 Mos Cheddar + fresh cherries
Hand-selected for extra aging. Robust and savory, with slightly sweet notes and a lingering finish
Starlight is a dry, fruity rosé that will accent the savory and sweet notes of the aged cheddar
Pairing #3 - Ragtime Red with 1-Year Cheddar and aged dried sausage
The youngest aged cheddar, a mellow, mild, balanced cheese with an aroma of fresh apples and a rich, satisfying flavor
Ragtime Red is a velvety semi-sweet red paired to enhance the delicate young cheddar
Pairing #4 - Marquette Red with Clothbound Cheddar and savory crackers
A cave-aged, bandage-wrapped cheddar aged for 6-8 months; grassy aroma, nutty body, and long savory finish
Marquette is a rich, dark, dry red – bold enough for this clothbound cheddar
Pairing #5 - Ragtime White with Shepsog and dried apricots
A blend of sheep and cow milk, natural rinded cave-aged beauty, bright, lemony flavors and a sweet, nutty finish.
