In "Making Modern Meals: How Americans Cook Today", Amy Trubek helps set up such a conversation by exploring a long term social transformation to domestic meal preparation - we don't have to cook and we are not obliged to cook at home and still feed ourselves and others. Cooking is a chore, it is an occupation, it is an art, a craft and it is for our health. Amy Trubek, PhD is trained as a cultural anthropologist and chef. She is the Faculty Director for the Food Systems Graduate Program and an Associate Professor in the Department of Nutrition and Food Sciences at the University of Vermont. She teaches courses in the contemporary food system, food and culture, qualitative research methods, and food history. Her research interests include the history of the culinary profession, globalization of the food supply, the relationship between taste and place, and cooking as a cultural practice.
