Catherine teaches nutrition and food science at the University of Vermont. She spent her last sabbatical year editing over 800 entries for the first ever “Oxford Companion to Cheese”, which won a 2017 James Beard Award. She is an expert on the microbiological safety of food and specializes in raw milk cheeses.
