Topworking is the method used to graft a new variety onto a mature tree. This technique is used to take wild seedling trees and convert them to varieties we wish to produce. We can change existing orchards over to varieties that are more desireable.
We will be working at beautiful old cider orchard in Berlin VT. Well over 100 years old, many of the trees have died, and re-sprouted from the original rootstocks, and many other seedling trees are not very productive. We will be grafting many varieties of cider apples back into the existing mature trees.
We will examine the various methods used in topworking, and spend most of our time making grafts in the orchard.
