Just wanted to remind you we are offering meat classes at Agricola! Our first class is on sausage making and will be held this Sunday, January 22nd, 2pm. In this course you will learn the basics about lean muscles and fat, your building blocks for fresh pork sausage. We will have time for hands-on practice to choose, cut, grind, mix and case two different types of sausage and we will discuss important cooking techniques and casing details to prevent your sausage from exploding. By the end of the course you will know the spice ratios so that you can start making your own sausages at home. No matter how skilled your butcher, there is no sausage better than the ones you will make on your own.
